Before You Begin...

  1. Always read the recipes in advance and see what ingredients are needed and how they should be prepared.
  2. If your recipe uses dried ingredients, make sure you have enough time to soak them.
  3. Prepare your meat. You can slice, dice, cut and marinate them several hours in advance, wrap them in foil or plastic wrap and refrigerate them until you are ready to start cooking.
  4. Wash, drain and cut vegetables.
  5. Separate your vegetables and align them in the order in which you will add them to your pan.
  6. Mix and/or organize your liquid seasonings (eg. soy sauce, cooking wine, etc.)
  7. If you decide to use cornstarch paste...mix and set aside
  8. Arrange all your ingredients and setting them out in the order in which you will be adding them to the pan.
  9. Clear away all other items that you will not be using. Put away all bottles and jars and wash all the dishes.
  10. Get out your cooking pans, utensils and serving dishes that you will be using.
  11. Set the table.
  12. Read the recipe once more before you begin.
  13. Doublecheck that you have everything that you need
